Seafood pancake (Haemul pajeon)

1/3 bunch of shallot tops

2 cups of frying flour (korean pancake mix)

2 eggs

1/2 squid

50g oysters (shells removed)

50g shrimp (peeled and tails removed)

50g mussels (shells removed)

2 red peppers

1/2 white onion

1 1/2 cups of water

Remove internal organs, skin and ink of the squid. Rinse and cut into bite sized pieces.  Rinse other seafood with salted water and put in a colander to drain. (I was lucky enough to find a package which contained the four types of seafood already cleaned and ready for me at homeplus!) Roughly chop the mussels, oysters and shrimp. Cut the red peppers on a diagonal ( I used a dried red pepper and found it easier to cut it with some scissors), cut shallot greens into 3cm sections and slice the white onion. Mix the flour, eggs and water together until all the lumps are gone. Add the batter to the seafood and vegetables and mix together. Using a ladle add the mixture into a hot pan with oil in it. I cooked mine on medium high heat. Flip once golden, if your “pancakes” are on the thicker side if you put a lid on your frying pan while cooking you middle will cook through faster and you will be less likely to burn your food. 

Enjoy the finished product with this dipping sauce.

1/2 tbsp vinegar

1 tsp sesame seeds

1/2 tsp red pepper powder
